Turkey Soup



For the Canucks, Thanksgiving is now a faint memory and all that's left is the turkey carcass. BUT that's not a bad thing. We have pictures of a great meal and the makings of a warm soup. Don't throw out the carcass. It's a whole other meal.

Ingredients

1 turkey carcass
water to cover
1 large onion diced
2-3 carrots, diced
2 stalks celery diced
3-4 cloves garlic
2-3 potatoes, diced
2-3 Tbsp Olive Oil

Method

1. Soften onion, celery and carrots in olive oil. Add garlic
2. Add the turkey carcass and cover with water
3. Bring to a boil and turn down to simmer. Add salt and pepper.
4. Let stock simmer for the flavours to infuse the soup.
5. Add diced potatoes and adjust seasonings, simmer until potatoes are done

This is a base soup. I generally will add whatever else I have around that looks like it could make the soup bolder, i.e. leeks, barley

There's really not much you can do to this soup to mess it up.

  4. The first stock I made was a turkey one, after Thanksgiving last year. It comes out so wonderful and you're right, it's hard to mess up in any way. Good stuff.

  9. i just had turkey soup for dinner today! but not because of thanksgiving; its bc i'm all yucky sick and i hoped eaing turkey soup would cure me, like chicken soup.

  10. frankly, i think i look forward to the leftover turkey more than the original. :) in fact, one of my co-workers bakes two turkeys, one that gets devoured on thanksgiving, and one to keep for leftovers. although, technically, can they still be called leftovers? :)

  11. I've always been with family for Thanksgiving, so I never get all the leftover turkey. Maybe this year I will do a turkey on some random day - just so I have all the leftovers!

  12. I just love homemade soup and this looks delicious!

    My mum taught me as a child not to throw out a carcass and freeze it if need be for the next pot of soup.

  13. When all is said and done and the turkey bones are bare, I roast the bones in the oven. I wait until they are golden. I take them out and put them in the stock pot and add all the veggies and stuff to make broth. I find it adds a little more flavor.

  15. I always throw the carcass away, should remember this next time. Soup sounds very comforting, and it is seem so perfect for the use of left over turkey.

  23. I think turkey stock and soup are tastier than chicken...especially using a leftover turkey carcass.
