Cajun Salmon Steaks

Shortly after New Years, I wrote about some food resolutions. One resolution was to incorporate more fish into our diets. After reading this, Melissa from Alosha's Kitchen mentioned a cookbook known for its great fish recipes, Fish Without a Doubt.

The goal is to broaden my fish-eating horizons. But...some habits die hard. So, I started off with a salmon recipe. The cajun spice mix was an excellent compliment to the pan-fried salmon, which was then finished in the oven.



Cajun Spice Mix


4 tsp coriander seeds
1 tbsp fennel seeds
2 tsp white peppercorns
2 tsp black peppercorns
1 tsp cayenne
4 tsp Hungarian paprika
4 tsp chili powder
2 tsp celery seeds
1 tbsp dried oregano, crumbled
1 tbsp dried thyme
2 tbsp coarse salt
2 tbsp dried onion
1 tbsp garlic powder


Combine the coriander seeds, fennel seeds, and peppercorns in a spice grinder and process until you have a course grind. Combine with the rest of the ingredients and mix well.


Transfer to a jar and keep out of the light for up to 6 months.

  1. That shows you where my head is. I was looking for Cajun Spice just the other day in the grocery store....of course I could have made my own. This would be excelelnt on salmon:D

  4. The fact that you remember your resolutions is impressive! And nothing wrong with salmon -- it's so delicious! I cook it all the time too... last week I tried to diversify and had swordfish instead. But I realized I really like salmon best.

  7. those peppercorns are gorgeous--they look like chocolate kix. :) my favorite is the pink peppercorn--alliteration, pinkness, and spice. :)

  9. I'm so glad you posted this! Sorry I've been so lax about getting started. Now that vacation is done, I do plan on making the sauteed one.

    The salmon looks even better than I expected. I may give it a shot!

  11. Thanks so much for posting the recipe for the cajun spice, I made some red beans and dirty rice for supper today, wish I had checked out your blog first, instead of using the store-bought one :)

  16. Looks very tasty. I usually use cajun on white fleshed fish lie Halibut and ling cod bit will give this one a whirl!
