Auntie Sharon's Recession Proof Chicken Dish


Sometimes we happen to be at the right place at the right time. I'm not saying that's a natural ocurrance for most of us but when it happens it's a good thing. Some of you may recall that I became the most unwilling recipient of Auntie Takeout's pet rabbit during spring break. This rabbit - his name is Stewie (go figure she'd name a rabbit - Stewie ... don't give me ideas) doesn't really fall into my category of pets I'd love to have. Stewie came complete with a 2 bedroom condo (i.e. 2 cages joined together - one for his bedroom, pardon me for living and one for his feeding station and washroom facilities. Stewie has his own fabricated little house that he goes to when he wants to be alone - imagine a freaking diva rabbit. The rabbit is a vegan who eats a special preparation of kibble and enjoys with relish his daily portions of fresh parsley, bok choy and broccoli rab.

I know - I'm going on and on about a rabbit. Generally Stewie isn't a very pleasant creature - he bites, if he gets loose he'll chew up every electrical chord in the house and he doesn't exactly smell like a perfume factory either.

BUT - and you knew there was going to be a but - I'm always in awe of how creatures from all breeds can in fact create relationships and develop affection for one another. Stewie doesn't like me and the feeling is mutual so at least we have an understanding. My female Shih Tzu - Suki goes wild for this rabbit. There's a nurturing part of this small dog that is so protective and loving to "the rodent". Now that we've got it in pictures, I just had to share. They sit together like the best of buddies.



They can sit like that for hours watching Animal Planet on T.V. You think I'm kidding....I'm not. Then it's time for Stewie to have his grooming so Suki is more than happy to oblige. Stewie sits still moving his ears closer to Suki for fear she may miss a spot.

Auntie Sharon is not really an auntie in this family but a dear friend of mine who, when entering my home always calls "Hiii Kids" to my dogs so we've adopted her as Auntie Sharon.



Here's how it works:

1. Pick a recipe from a book/magazine/blog/website/tv show and make it. (Note you can only submit 1 recipe per week)
2. Blog about it
- include where you got the recipe in your blog post (including a link to their website if possible)
- include a link to this post or this blog in your blog post
- include the logo (see above) for Bookmarked Recipes in your blog post
- include a photo of your recreation on your blog post
3. Email both ivyliac@gmail.com and bookmarkedrecipes[AT]gmail[DOT]com, mentioning Bookmarked Recipes #48, with the following information:
- Your name
- The name of your blog
- The URL for your blog
- The permalink for your entry
- A photo of your entry
- A note of where you got your recipe from

The roundup comes out every Monday so make sure you get your submission in.



Preheat oven to 400 F.


Ingredients


4 boneless skinless chicken breasts
whatever vegetables look like they might not last a couple more days in your fridge
19 oz can of diced tomatoes
your favourite spices (I used Mrs. Dash)
salt and pepper to taste.

Method

Line oven proof pan with tin foil
spice chicken breasts
take your variety of vegetables (I used onion, garlic, asparagus, swiss chard, green pepper) and just place on top of chicken breasts
add 19 oz can diced tomatoes

Cover with tin foil - bake for approximately 40 minutes

Don't expect any comments about your dish when you feature those two cuties. You know that the animals are always the stars in posts. Now you have one more reason not to like Stewie. Thank God his name is not Barbequey.

I can't imagine Thatdog sitting so nicely with a rabbit. Every morning he feels it's his duty to try and kill each one we see on our runs.

I love that story. Thank you for sharing. I always love to see animals that are different getting along. Its the social worker in me I guess. Tolerance and diversity. If only they went hand in hand- it would be paradise now wouldnt it?
