We missed last months Simple Bakes' recipe: Ultimate Double Chocolate Chip Cookies.
But, we're back on the Simple Bakes bandwagon with this month's recipe:
Banana Chocolate Chip Muffins
Ingredients (check the bottom right portion of my sidebar for the Culinarty Converter)
3 very ripe bananas
125ml vegetable oil
2 eggs
250g plain flour
100g caster sugar
½ teaspoon bicarbonate of soda
1 teaspoon baking powder
150g dark/milk chocolate (white chocolate or butterscotch chips/morsels)
Preheat the oven to 200ºC/180ºC fan oven/gas mark 6 and line a 12-bun muffin tin with muffin papers.
Mash the bananas and set aside for a moment.Pour the oil into a jug and beat in the eggs.
Put the flour, sugar, bicarbonate of soda and baking powder into a large bowl and mix in the beaten-egg-and-oil mixture, followed by the mashed bananas.
Fold in the chocolate morsels, then place equal quantities in the prepared muffin tin and bake in the oven for 20 minutes.
I made a double recipe and made the 2nd portion into a loaf. I put it in the oven for about 45-50 minutes (until tester comes out clean).
Giz was shocked when I told her what I did with the loaf...
I took it to a knitting group meeting. I know - it sounds kind of old ladyish. But it's not - I swear. It's a group of women ranging from about 25-35. I'm working on a scarf for R. He picked out the wool - which may explain the colour:
After I finish this scarf, which is actually the only thing I can knit, I'm going to try to learn how to knit a touque.

I would love to learn to knit! Go you! And I think I'm going to make those muffins (the loaf version) today! I have everything on hand, and my kids will love it! :)

Pretty impressive on both counts. The muffins look great and the picture is really good. Can I put in my order for a touque to match my scarf (once you figure out how to make it :)

These are my favorite types of muffins. I adore them! It's just the perfect combo of ingredients.

I love the muffins. Bananas and chocolate go so well together. I'd save those for great first impressions, or interrogating someone. I would sing like a canary for one of those muffins :)

Knitting is a fabulous hobby! I ran a knitting group in San Francisco that met every week at a bar to knit & we were not old ladies. Keep it up, its almost as fun as cooking

I only yesterday learned the difference between muffins and cupcakes so I couldn't submit my recipe which was cupcakes (lol). I used to knit ages ago but have forgotten everything now.
I'm onto 40, but I've loved knitting for ages. It's another thing that I havent knitted in a while, but I find the clcikety-click of needles very therapeutic too. Great muffins BTW...gotta try the version with oil soon. Mine have butter...cheers
