Salmon Patties




Some days are just the kind of days where simplicity reigns supreme. Do you ever open the fridge, take a browse, think about what to make for dinner, close the fridge and then find 3 or 4 other things to do? Then all of a sudden you're back at the fridge door wondering the very same thing all over again. I've decided that it's important to be clear with myself on days like this - don't expect the unattainable - you're not going to be cooking anything too fancy - stick with something simple and nutritious before you get so hungry that anything consumable becomes dinner. Don't worry - I'm not naieve to think that doesn't happen - and it happens to me - that's why I've become the self professed expert on "what not to do".

As part of my New Year's resolution I started a yoga class last night. Apparently there are a whole host of muscles that I haven't used in a very long time. I don't even think I knew they existed - until this morning when they started yelling at me to notice them.

So salmon patties it is - it's healthy, it's quick and no guilt about eating crap.


2 cans Sockeye Salmon
1 egg
1/2 c. bread crumbs (I used just slightly less than 1/2 c.)
salt and pepper to taste

Mix all ingredients together (I don't like the salmon bones but some people don't mind them) and form into patties.
Spray fry pan low fat coating (I use a canola spray)
Note: You can add just about anything to this and still have a decent outcome.

Brown both sides and serve with salad or side of choice. StumbleUpon

sweet! I am tryin this!! I got salmon in my fridge right now! Um do you ever make rice pudding? I was looking for a good recipe. I am also trying the oatmeal raisin muffins- they looked really easy to make and good too.
