Sausage Tortellini and Awards


On Food Network Canada, we have a chef named Sandi Richard who talks about that one night of the week that's more hectic than others. She calls it "Fright Night". Everyone has one. It's the one night that you're least likely to even remotely think of cooking let alone make it happen. My "fright night" generally calls for a very quick throw together. Sausage tortellini is just a perfect fright night meal.

Ingredients:

Packaged tortellini
2 links hot Italian sausage
1/2 large onion, diced (I used vidalia)
1 28 oz can whole tomatoes (diced is fine too)

Method:
1. put tortellini in boiling water and cook until nearly soft
2. cut and brown sausage
3. add onion and fry until beginning to change colour
4. add 28 oz can tomatoes

Instant dinner.

When I was working I think that every night was Fright Night. Sandie is a sweetie, but her show is on at some really early time of tyhe moring...good thing I am up:D

Coming home from work and cooking just wasn't happening tonight, Hubby made burgers and dogs on the grill while I took a nap. This looks good, I make it on a night I do feel like cooking hee hee.
