The theme is citrus.
A few weeks ago, I saw a recipe for an orange crumb cake at Everybody Likes Sandwiches.
Orange Crumb Cake
2 c flour
1 1/2 c brown sugar
zest of 1 large orange
1/2 t cinnamon
1/2 t cardamon
1/4 t nutmeg
1/2 c olive oil
3 T orange juice
1 c yogurt
1 egg
1 t vanilla extract
2 t baking powder
1 t baking soda
1. Preheat oven to 325 degrees. Lightly butter and flour a 8 or 9 inch round or square pan. Set aside.
2. Stir flour, sugar, orange zest and spices in a medium sized bowl. Add oil and orange juice and stir lightly until mixture forms clumps. Remove 1 cup of this mixture for the topping and set aside.
3. In another bowl, combine the yogurt, egg, vanilla, baking powder and baking soda until blended. Add the flour mixture to the yogurt mixture, stirring until batter is smooth.
4. Pour batter into prepared pan
5. Sprinkle with the reserved cup of topping.
6. Bake for 40 minutes or until cake tester comes out clean.
Verdict: The cake is nice and moist. You can taste the orange, more as a subtle after-taste. That is mixed with the cardamom, which adds depth. I think next time I'll add raisins. I love raisins and probably come from a different planet than those who do not like raisins.

I think I am going to try your recipe for brownies with sweet potato puree. In an attempt to get them into my children. Orange and green are not the colors of choice for them. Then I come here to get the recipe and you have another delicious looking recipe. Why I otta!

here's something odd about me: i love golden raisins but hate golden grapes. i hate purple raisins but love purple grapes. i guess i come from my own unique planet. :)

So here's my question for you: how on earth do you (and R) manage to finish a whole cake? I've been scared off from making cakes and things because Do and I never, ever manage to finish more than half before we get sick of it. Maybe this Orange Crumb Cake is an opportunity for a party, or a very happy PI?
That orange crumb cake looks good. I like the sound of using the cardamom in it.
Grace - well, since you do like some raisins, I'd say you and I are in the same solar system.
Neen - It varies. Usually, I try to make things that I can cut up into small (individual-sized) pieces and freeze. Then we take them for lunch. With this cake, I didn't freeze it and there are still a couple of slices left. I've grown tired of it. But R has been taking it for lunch or having it for breakfast.
But...if I really like the cake, getting tired of it isn't usually an issue. R is not a very fussy eater and is just as content with KD as he is with gourmet food. So, if I remind him that something needs to be eaten, he'll eat it.
I also love raisins and agree about the extraterrestrial nature of non-raisin likers. They're nature's candy, people!
That orange cake looks so delicious and moist. I would like it soaked in Grand Marnier, with a strong cup of coffee.

When I made the buttercream frosting, I used Nielsen Massey vanilla. :) I didn't mind that it wasn't clear.
