Heavenly Salad




I know, I know it's a bit of a cheesey name and the picture really doesn't do it justice, but, I'm telling you - this salad really is heavenly. It's not so much because of the greens, it's all in the dressing. I got this idea from a dear friend who's threatening patent rights on the dressing but before she makes it to the patent office, I thought it would be good to share it with the immediate world.

The Salad:

Field greens
1 cup pea pods
1 cup cherry tomatoes cut in half
3 roasted red peppers in thin slices
2 small tins of mandarin oranges
1/2 cup sliced strawberries
1 cup toasted walnuts
1/2 cup unsalted sesame seeds (I'm sure I used more)

You can be creative and add whatever else you like. Because I prepared the salad in advance, I just put all of the ingredients underneath the field greens. It prevents the tsalad from getting soggy.



The Dressing:

Juice of 1/2 lemon
10 tbsp oil (either grapeseed or canola but not olive oil)
4 tbsp vinegar (I may have added another tbsp or 2)
2 tbsp liquid honey
salt and pepper

Just before serving emulsify the dressing with either an emersion blender or in a closed container and shake the heck out of it. Dress (salad) and enjoy.

This salad passed the "grandmother seal of approval" from a gramma who eats nothing, likes nothing and gives everything the stink eye before it even touches her lips.

You know what makes the dressing so great? Its so simple and basic. I bet that's why you think its heavenly.

Lovely dressing! I've been making a similar but tangier dressing for ages.

Same concept, but I use less oil (equal to lemon+vinegar so it will be 5 tsbp for your recipe).

Sometimes the simplest of dressings can really make a salad. I made an arugula salad recently that had literally only olive oil and lemon juice as the dressing, and it was wonderful! I'll have to try yours.

recipegirl - oil and lemon juice is usually what I do - I think the honey makes this special

Did you ever watch that Seinfeld episode? Everything was "heavenly"- you may get that joke or not.

I love strawberries in a salad.

Is it just regular white vinegar I should use? I'm always looking for good salad/dressing recipes, because I tend to enjoy salads when I'm eating out but then never like them when I make them myself.

canuck - I used regular vinegar - safe to start with that and then just experiment. I have a nice lavender vinegar that I'll try next time.

Me again :). After stumbling upon your heavenly salad I just want to let you know I’m part of a team that organizes a foodie roundup event every 2 weeks on a given theme and would love if you would participate. If you are interested the current theme is springtime salads, and your post would make a great entry. So what do you say?
Also if you have any theme suggestions I would be happy to hear them too.

I just saw your salad in the round up and after reading all the ingredients I must say I love the idea of combining fruits and vegetables in a salad. Don't know why but until now I've only used fruits (juice) in the dressing.
