Apologies for the crappy pictures - I am using Giz's camera and it's an ancient block of metal. R has my camera in France with him, taking about 1/10 the number of pictures I would take. I'd get him to blog the meals he's eating there, but I'm sure you're not interesting in reading about KD (Macaroni and Cheese*).
But don't worry about me, I'm experimenting with dinners at home, with some successes....like today's post. I found this winning meal over at We Heart Food. Go check them out - they've got great recipes and do a cute "he said-she said" bit with every post.
I found their Mango Chicken with Red Pepper recipe and made it the same day for dinner. My modification are in brackets.
Mango Chicken with Red Peppers
2 large boneless chicken breasts, cut into bite-sized pieces
2 large mangoes, diced into cubes (also added 1/4 of a pineapple, bite-sized pieces)
1 red bell pepper, sliced (didn't have - but included mushroom and cherry tomatoes instead)
1 medium-sized onion, sliced
1-2 red chilies, finely chopped
1 tsp ginger-garlic paste
1/4 cup chicken stock
1/4 tsp turmeric
1/2 tsp chili powder
1/2 tsp ground cumin
1/2 tsp ground coriander
2 tbsp canola oil
salt, to taste
cilantro, chopped for garnish (didn't include)
Heat the oil in a large non-stick wok over medium-high heat and saute the chopped chilies, ginger-garlic paste and onions until lightly browned. Add in chicken, peppers and spice
and stir-fry till chicken is cooked through.
Stir in chicken stock and mango, and simmer for a few minutes.
Season with salt, and garnish with fresh coriander leaves. Serve with rice.
4 Servings (great as leftovers too!)
Verdict - this dish is a definite keeper. I also really liked the pineapple. The mango is nice, but much more subtle than the pineapple.
*I don't know if it's a good thing or not, but R would be just as content eating KD all of the time as he would a gourmet meal that I make.

Lol - I have a sneaky love of KD too - though I only indulge once in a blue moon. The rest of the time I'm gourmet... honestly!! ;D

yeah, this'd be delicious, no doubt about it. at least 33 times better than mac & cheese...
maybe christmas can come early for giz and she can retire the ol' block of metal. my digital camera is one of the best investments i've ever made!

This recipe sounds very intriguing Psychgrad especially since mangoes are in season. I also passed on another award to your and your mom. I'm quite sure you already have this one, but it had to be done and you both deserve it:D

I love the use you give to mango in your part of the world! Before knowing you all, Mango was only for juices purposes :D
